Gringa of shrimps Noray al pastor (shrimp gringa)

We love to eat them on the street. But, what do you think if we get into “taquero” mode and make them at home with the Gringa de langostinos Noray al pastor recipe? 

You don’t need the aforementioned griddle, which is the most representative of this dish. If you have a good frying pan, it will be enough to enjoy this recipe courtesy of our friend and collaborating chef Roberto Ruiz.

How to prepare the recipe of Gringa of shrimps Noray al pastor (shrimp gringa)

Ingredients (for 4 people)

For the coastal sauce:

  • 12 fresh green tomatillos
  • 100g chipotle chili
  • Salt
  • 20g coriander
  • Half an onion
  • 4 garlic

 

For the shepherd’s marinade:

  • 10 guajillo chiles
  • 4 garlic
  • 2 teaspoons cumin
  • 2 tablespoons oregano
  • Half cup white vinegar
  • Fine salt
  • Black pepper

Elaboration

For the coastal sauce:

  • Cook the tomatillos in a skillet, along with the onion and garlic. Once done, add the cilantro and chipotle, and mash well with the rest of the ingredients.

 

For the shepherd’s marinade:

  • Hydrate the guajillo chiles in hot water and grind with the rest of the ingredients of the marinade al pastor. Set aside.

 

FINAL AND PRESENTATION:

  • We marinate the shrimps in our shepherd’s marinade, sauté them and sear them so that they turn golden brown. This is how we form the gringas.
  • We put a wheat tortilla (it is important that it is wheat because it is the traditional way to make them).
  • Then add the cheese mixture (to taste), the shrimps that we sautéed al pastor, close and return to the griddle/skillet to brown the ends of the tortilla a little.
  • We finished with salsa costeña.
