Shrimps in chickpea tempura with yoghurt sauce

Orly shrimps, also known as shrimps a la gabardine, is the perfect appetizer to whet your appetite before a big meal. This homemade technique taught by Eva Sierra, chef and director of Catering Spain, results in a real delicacy that is crispy on the outside and soft on the inside, as well as suitable for people with celiac disease.

How to prepare the recipe of Shrimps in chickpea tempura with yoghurt sauce

Ingredients (for 4 people people)

  • 20 Noray raw shrimps
  • 100 g of chickpea flour
  • Very cold water
  • Sunflower oil
  • Skewer sticks

 

For the yoghurt sauce

  • 300 g of Greek yoghurt
  • 40 g of grated cucumber
  • 3 tbsp fresh coriander

 

Elaboration

  • Using a whisk, mix the sifted chickpea flour with almost ice-cold water until the mixture is of medium density so that it sticks to the shrimps when spreading.
  • Peel the raw shrimps.
  • Thread the shrimps lengthwise onto a skewer.
  • Dip them in the tempura.
  • Fry in a frying pan or deep fryer in oil at 180º.

 

FINAL AND PRESENTATION:

  • Remove to a blotting paper.
  • Prepare the sauce by mixing the Greek yoghurt with the grated cucumber and finely chopped fresh coriander.
  • Arrange the skewers on a tray with the sauce on the side.
