Noray shrimps tinga burrito

How to prepare the recipe of Noray shrimps tinga burrito

Ingredients (for 4 people)

For the fried black beans:

  • 3 cans of black refried beans
  • 3 white onions
  • 12 peeled garlic
  • 570 gr of chipotle
  • 60 ml of sunflower oil
  • 1 liter of water

For the shrimp tinga:

  • 400 g of shrimps
  • 1 medium white onion
  • 3 vine tomatoes
  • 2 tablespoons of chipotle chili
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • 1 teaspoon of fine salt
  • 15 ml of sunflower oil

For the Xnipek:

  • 10 red onions
  • 12 limes
  • 1 orange
  • 2 tablespoons of fine salt
  • 2 tablespoons of oregano
  • 2 habanero peppers

For preparation and plating:

  • 15cm wheat tortillas
  • Black refried beans
  • Tinga shrimp
  • 1 avocado
  • Xnipek

 

Elaboration

For the fried black beans:

  • Fry the onions and garlic in a pot with oil.
  • Add the chipotle and let it simmer for about 10 minutes.
  • Add the beans, add 1 liter of water and simmer for about 30 minutes, stirring from time to time.
  • Mash and set aside.

For the shrimp tinga:

  • Poach the onion in a frying pan with hot oil, add the tomato and sauté until it is cooked.
  • Add the chipotle, cumin, oregano and salt.
  • Finally, sauté the chopped shrimp for 5 minutes and set aside cold before assembling the burritos.

For the xnipek:

  • Peel the onions and cut them into rings with the mandolin.
  • Mix the onions with the salt in a bowl and squeeze them with your hand to remove the water.
  • Squeeze the limes and the orange and let the onions macerate for at least one day together with the oregano.

 

FINAL AND PRESENTATION:

  • Place the tortilla on the plate and add the black refried beans on the base.
  • Next, add the shrimp tinga filling and form the burritos.
  • Then we take them to the griddle and brown them.
  • Finally, add the xnipek sauce and they are ready to serve!
