How to prepare the recipe of Noray shrimps tartare

Ingredients (for 4 people)

  • 1 kg Noray shrimps, raw and peeled
  • 1 small spring onion, finely chopped
  • Chopped parsley
  • Chives, finely chopped
  • 1 teaspoon of mustard
  • 1 tablespoon of soy sauce
  • 1 teaspoon Worcestershire sauce
  • 4 tablespoons of EVOO
  • 1 teaspoon of sesame oil
  • 1 lemon, freshly squeezed
  • 1 teaspoon mayonnaise sauce
  • 2 ripe avocados
  • Salt and pepper (to taste)

Elaboration

  • Peel and chop the shrimps into small pieces. Gather them in a bowl and season to taste with salt and pepper.
  • Put the spring onion, freshly chopped, in a colander and wash well with water, turning with the hand. Squeeze well, let the excess water escape and pour it on a clean cloth, squeezing it dry thoroughly. Add it over the shrimps.
  • Add the chopped parsley and chives, the mustard, the soy and Worcestershire sauce, the EVOO, the juice and the mayonnaise sauce. Season to taste with salt and pepper.
  • Stir a few times and adjust the seasoning.

 

 FINAL AND PRESENTATION:

  • Finally, peel the avocados and cut them finely, the same size as the prawns, adding them to the preparation.
  • Refresh for a few minutes and that’s it.

It is a good idea to add a couple of egg yolks at the end and stirring a few times. We can make the same recipe with chopped cooked shrimps.
