Noray shrimps cocktail

How to prepare the recipe of Noray shrimps cocktail

Ingredients (for 4 people)

  • 1 kg of Noray shrimps, cooked and peeled. We reserve the heads (once cooked)
  • 8 tablespoons of mayonnaise sauce
  • 1 Greek yogurt, unsweetened
  • 1 tablespoon of chopped parsley
  • 1 tablespoon of tomato sauce
  • 1 tablespoon of orange, tangerine or grapefruit juice, freshly squeezed
  • 1 tablespoon of lemon juice, freshly squeezed
  • 1 green apple, peeled, cored, and diced
  • 1 ripe avocado, diced
  • 2 fresh lettuce hearts, cut into thin strips
  • 1 fresh endive, cut into thin strips
  • 1 pinch of soy sauce
  • Salt and pepper (to taste)

Elaboration

  • Peel the shrimps and reserve the tails, and the heads, separately.

 

For the sauce:

  • Add the mayonnaise to the bottom of a bowl.
  • Crush the cooked prawn heads with your fingers and extract the juice they release.
  • Add the yogurt, the chopped parsley, the tomato sauce, the juices and, finally, salt and pepper to taste.
  • Stir everything until a homogeneous sauce is obtained.

 

 FINAL AND PRESENTATION:

  • Chop the cooked shrimps into small pieces.
  • Add the diced apple, the avocado, the lettuce, the endive, and the chopped shrimps.
  • Add the soy sauce. Stir everything together and adjust the seasoning.
  • Last but not least, cool in the refrigerator and serve it, well chilled, in cocktail glasses; or as a filling for vol-au-vents, or to serve on toasts, to stuff tomatoes, etc.
