Noray black ceviche with shrimps

Our friend and collaborating chef, Roberto Ruiz, surprises us again with this wonderful recipe of marinated Noray shrimps black ceviche, in the purest Mexican Pacific style.

How to prepare the recipe of Noray black ceviche with shrimps

Ingredients (for 4 people)

For the marinade:

  • 1 cup lime juice
  • 2 tablespoons soy sauce
  • 1 teaspoon fine salt
  • 60g cucumber
  • 4 units of chiltepin chili
  • 2 pcs corn tortillas (tortilla chips)
  • 10 g coriander

 

To serve:

  • 15 Noray shrimps, cleaned and butterfly-shaped
  • ½ cucumber cut into seedless strips
  • Medina red onion cut in julienne strips
  • Half an avocado cut into cubes and toasted with a blowtorch.
  • Cilantro leaves
  • Jalapeño slices for garnish

Elaboration

For the marinade:

  • Blend the lime juice, a dash of soy, cucumber strips, fresh cilantro, tortilla chips, chiltepin chili and a pinch of salt. Until we get a smooth and homogeneous sauce.

 

FINAL AND PRESENTATION:

  • Marinate the shrimps in the marinade for approximately 3 minutes.
  • To assemble the dish, place the marinated shrimps and add diced avocado, grilled (so that they are slightly toasted), slices of jalapeño bell pepper and cilantro leaves.
