Noray shrimps fried with basil and tartar sauce

How to prepare the recipe of Noray shrimps fried with basil and tartar sauce

Ingredients (for 2 people)

For the shrimps:

  • 10 Noray shrimps
  • 10 basil leaves
  • Bric paste
  • 2 Eggs

 

For the tartar sauce:  

  • 150 gr of yogurt
  • 120 gr of sunflower oil
  • 20 gr of capers in vinegar
  • 20 gr of chives
  • 10 gr of chopped parsley
  • ½ clove of garlic without germ

Elaboration

  • Place a shrimp tail and a basil leaf on the bric pastry, brush with egg and wrap it around itself.
  • Fry in sunflower oil at 180Cº. Drain on paper and place on a plate with the tartar sauce.
  • Cut the filo pastry between 8- 10 cm.
  • We beat the eggs.
  • Peel the shrimps and gut them.
  • On the bric pastry we place a shrimp tail and a basil leaf, we will paint with egg and wrap it on itself.
  • Chop the spring onion, cucumber and caper in bronixe. Grate the garlic with a microplane, add the chopped parsley to the pickles.
  • Make an emulsion with the yogurt, adding the sunflower oil in a thin stream as if it were a mayonnaise.

 

FINAL AND PRESENTATION: 

  • Mix all the ingredients and salt and pepper.
  • Fry in sunflower oil at 180Cº.
  • Drain on paper and place on a plate with the tartar sauce.
