Crispy Noray shrimps with chipotle sauce

How to prepare the recipe of Crispy Noray shrimps with chipotle sauce

Ingredients (for 4 people)

For the crispy shrimps:

  • 12 peeled shrimps with tails
  • 1 cup of panko
  • 1 teaspoon of fine salt
  • ¼ tablespoon of ground black pepper
  • ½ cup of flour
  • 2 eggs
  • 1 teaspoon of paprika or guajillo chili
  • 500 ml of sunflower oil

For the chipotle mayonnaise:

  • 4 cups of mayonnaise
  • 1 can of crushed chipotle
  • 15 ml of soy sauce
  • 30 ml of lime juice
  • 1 lime

Elaboration

For the breading:

  • Mix the flour with the fine salt, ground black pepper and paprika or guajillo chili in a bowl and batter the shrimps in the mixture.
  • Then dip the shrimps through a bowl with the beaten eggs and then finish by dipping them through another bowl with panko. Set them aside.
  • Fry the shrimps in a pan with hot oil at 180º for about 5 minutes or until they get brown.
  • Remove to a plate with paper towels.

For the chipotle mayonnaise:

  • Strain the crushed chipotle.
  • Mix the mayonnaise with the chipotle, the soy sauce and a dash of lime juice and finish adding fresh lime zest.

 

FINAL AND PRESENTATION:

  • Serve the chipotle sauce in a bowl on a deep plate and place the crispy shrimps around it.
  • Ready to enjoy!
