How to prepare the recipe of Noray shrimp ceviche with mango

Ingredients (for 4 people)

  • 12 cooked shrimpS without skin or heads
  • ½ cup of julienned red bell peppers
  • ½ cup of mango (at its peak) cut in strips of 1×4 cms
  • ½ cup of chopped red onion
  • Fresh coriander leaves
  • 1 cooked sweet potato
  • 2 tablespoons of aji rocoto paste
  • Juice of 5 limes.
  • ½ cup of vegetable oil
  • ½ tablespoon of grated fresh ginger
  • ½ cup fish stock
  • Salt

 

Elaboration

  • In a bowl, mix the aji rocoto chili paste, the juice of the limes, the vegetable oil and the ginger.
  • Check the citric point with the fish stock, add salt and keep cold.
  • In another bowl, mix the shrimps, bell pepper, mango and onion. Add a few drops of lime juice and salt.

 

FINAL AND PRESENTATION:

  • Serve in a deep dish and bathe with the previous sauce.
  • Accompany with diced cooked sweet potato and decorate with fresh coriander leaves and serve.
