Brown rice with Noray shrimps

Our friend Eva Sierra, director of Catering Spain, proposes a recipe from the rich Mediterranean gastronomy. This brown rice with shrimps is presented as a nutritious and healthy dish ideal for maintaining a balanced diet.

How to prepare the recipe of Brown rice with Noray shrimps

Ingredients (for 4 people)

  • 500 gr of Noray raw shrimps
  • 300 gr of organic Brown rice (it can be from Calasparra)
  • 250 gr of mantis shrimps
  • 3 tablespoons of extra virgin olive oil
  • 200 gr de cherry tomatoes
  • 1 large onion
  • 300 gr of zucchini
  • Parsley

 

Elaboration

  • Peel the shrimps and reserve the meat for later.
  • Sauté the shells and heads of the Noray shrimps over high heat with 2 tablespoons of oil.
  • Continue frying and add the mantis shrimps, the chopped tomatoes and onion and salt.
  • Cover with water and cook over medium heat for 20 minutes. Strain and season with salt.
  • Sauté the diced zucchini in a frying pan, add the Noray shrimps’ tails and set aside.
  • Cook the rice in a pot with 1,5 liters of broth for 30 minutes in an express pot or 45 minutes in a traditional pot.

 

FINAL AND PRESENTATION:

  • Add the shrimps with the zucchini to the rice, plate and decorate with curly parsley.
  • It can be served with ali oli sauce.
