Red aguachile of shrimps Noray

You can never have too many aguachiles and, for that reason, we now present you with another recipe for this very Mexican dish from chef Roberto Ruiz, red aguachile de langostinos, based on guajillo chili and Noray shrimps. How to prepare the recipe of Red aguachile of shrimps Noray

Ingredients (for 2 people)

For the guajillo marinade:

  • 10 gr of guajillo chili
  • 140 ml lime juice
  • 10 gr white onion
  • 10 gr cilantro
  • Salt and pepper to taste
  • 1 tablespoon soy sauce

 

Preparation and plating

  • 12 cleaned Noray shrimps cut in half, six per plate
  • 75 ml of marinade per dish
  • Red onion cut in fine julienne strips
  • Very thinly sliced cucumber
  • Seed mix to decorate the top, seeds that you have at home.
  • Diced avocado
  • Cilantro leaves

Elaboration

For the guajillo marinade:

  • Blend all the ingredients and strain. Reserve in the refrigerator.

 

FINAL AND PRESENTATION:

  • Place the marinade in a deep dish preferably. Then we put the shrimps in a harmonious way.
  • In a bowl, mix the onion, cucumber and avocado. Once mixed, place it in the center of the plate and decorate with cilantro leaves.
